Several years ago, Wolfburn were fortunate enough to acquire a small number of unique 100L Pedro Ximénez Spanish oak casks. Having been used just once to mature a small batch of sherry in Jerez, Spain, they arrived in Thurso, Scotland, and were immediately sent to warehouse No.1 to be filled with Wolfburn spirit. The depth of flavor they imparted on the maturing spirit inside was evidenced in the glorious cherry-red color of the resulting single malt. For the lucky few, it was not only a collector's whisky but also an incredible drinking dram.
In terms of tasting notes on the nose, hints of dried apples and light oak mixed with fruit blossom, and a subtle sweetness overlaying the aroma, promising good things to come. On the palate, it was described as sumptuous, rich, and sweet, a triumph of a dram with a panoply of flavors, including dark chocolate, maple syrup, macadamia, and fruit cake. With time, soft spices also made themselves known, a faint layer of cloves and cinnamon, not overpowering but rather complimentary to the whole. The finish, in their opinion, lingered perfectly, with sweet hints of golden syrup gently fading away, leaving a warming trace of caramel at the end.
