This wine sees extended maceration, with a full month on skins, this means it is intensely full bodied, but this length of time allows for a very smooth mouthfeel. Fermentation in large, old, French oak vats and 50% barrel ageing (15% new) is just what this wine needs, oxygen is the wine’s friend as it helps to tame the powerful structure.
