Description
A delightful single plot sourced wine. Fine buttery and floral notes of acacia on the nose which becomes a wine of substance and finesse on the palate. Some creamy textural notes up front reveal a subtle use of oak whilst on the finish there are some underlying mineral notes and hints of citrus zestiness.
Sourced form a single plot in the southern Cheilly-les-Maranges region, close to the top of the rounded hills of Cotes de Beaune. Chardonnay vines average 25 years of age, lying on water-retentive clay with fossilised sea shells, and they are grown sustainably, limiting the use of phytosanitary chemicals and preferring tillage to herbicides. Harvest is done by hand; grapes are sorted in the vineyard and placed directly in small drilled boxes, avoiding maceration before winemaking and limiting handling. Whole bunches are pressed gently as soon as they arrive in the cellar and are fermented and aged in oak barrels, 55% of which is new oak, for fifteen months.
