This stunning single cask from Fiji has notes on the nose of empyreumatic, earthy, peated and slightly animal notes, heavy flowers, cigar box, Corinth raisins, dried fig. The palate is beautiful, intense and is long with peat, candied fruits, woody and encaustic, smoky notes, dry vanilla and pecan nut this leads to a tobacco, nutty and malty finish.
Distilled in 2009 by Rum Co. of Fiji. Made with molasses which is fermented over 4 to 5 days and then distilled triple, column still and pot still. Tropically aged for 8 and a half years in bourbon casks and then 2 years in Ferrand casks. This is finally matured in 6 casks from the peated whisky producer Kilchoman, this brings a smoky character and a nice balance with the exuberant Fiji rum, which can be a little grassy in profile.
