A striking straw yellow presented wine with an intense and aromatic bouquet that transfers to the palate. Fruity notes of grapefruit, white peach, melon and tangerine with fresh green herbs and slate minerality. A great wine with great matching depth and complexity that finishes with a refreshing salinity and zesty acidity.
Mt. Etna is mainland Europe’s largest and most active volcano and a superlative example of a volcanic wine region. Centuries of eruptions have created a complex mix of fertile, layered and well-drained soils. Sicily benefits from ample sunshine and warmth, but Mt. Etna’s high elevation also provides greater rainfall, moderating breezes and cooler temperatures. Etna’s unique qualities mean soils, micro climates and exposures change dramatically from site to site, creating a complex range of flavors, structure and depth in the finished wines. Tornatore’s 114 acres of vineyards range across Etna’s finest sites at elevations from 1,800 to nearly 2,300 feet on the most-prized northern slopes of Mt. Etna.
The grapes were harvested by hand in small crates and quickly brought to the winery to be hand sorted. The grapes were destemmed and slightly crushed, then sent to the vertical press where they were gently pressed. Fermentation occurred at low temperatures — around 60° Fahrenheit — and the wine remained on the lees for about three months. Total aging was 4 to 6 months in both cement and stainlesssteel tanksto preserve full fruit character.
