Winter 2007 Release
Limited, 1 of 1785 bottles.
This 'Winter' release has been produced using the barley variety 'Optic' and was grown on their South fields and then harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the summer of 2007. With the use of ex-bourbon barrels you can expect notes of oak, vanilla and biscuit like malt.
Daftmill is a farm distillery based in the Lowland area if Fife, it is owned and operated by the Cuthbert family and is only run during the quiet periods of farming; mi-summer and winter. This new distillery sometimes only produces 100 casks a year, you are sure to have something limited in supply from these guys. When not distilling, Francis Cuthbert looks after the estate growing and malting barley used to make this delightful Lowland whisky.
The seven first fill ex-bourbon barrels that make up this release are: 023/2007, 024/2007, 025/2007, 027/2007, 032/2007, 035/2007 and 038/2007 which were distilled and filled in November 2007.
One of only 1785 bottles released for this vintage.
