Baglio Gibellina, nestled amidst the rolling hills of Salemi and Santa Ninfa, is a winery deeply rooted in the history of Sicily. The ‘Baglio’, the traditional courtyard at the heart of the estate, speaks to the winery’s commitment to preserving the authentic spirit of the region. Their old vines, cultivated between 300-600 metres above sea level on a blend of clay and volcanic soils, produce wines of remarkable quality and character. This U Passimiento is a prime example, showcasing the winery's dedication to quality and tradition.
This exquisite red wine is a harmonious blend of Frappato and Nero d'Avola grapes. The Frappato grapes are harvested at optimal ripeness to retain their vibrant freshness, undergoing a slow fermentation in stainless steel tanks. The Nero d'Avola grapes, meanwhile, are left to wither slightly on the vine, concentrating their flavours and sugars. They are then hand-harvested and gently pressed, with fermentation carefully controlled at low temperatures. This meticulous process results in a wine with a natural, subtle sweetness, achieved by halting fermentation through temperature control. Finally, the wine matures in steel tanks, preserving its fresh, fruity profile.
