A superb full-bodied wine which is made from the Primitivo grape variety which have been dried slightly using " il giro del picciolo" technique where the stems of the grape bunches are twisted so that they no longer receive nourishment. They are left for about 12 days and in that time they loose 25-30% of their weight, which concentrates the juice and natural sweetness of the grapes.
Organic grapes are harvested by hand from low yielding vines near Sava in Salento, south of Apulia.
Full-bodied and smooth it has a nose of ripe cherries and forest fruits with a touch of spice and chocolate notes. Dried fruits on the palate with autumns fruits, damson, red plums followed by a smooth lingering finish hints of sweet fruits and spice.
Aged: 25% is aged for 12 months in French and American barriques
Food: Great with cheese, hearty meat dishes.
