A blend of 31 herbs and spices, many picked in and around Knightor, were used for their Dry Vermouth. Some of the Classic herbs were used such as Wormwood , Green Cardamom, Cinchona and Liquorice, plus some more unusual and herein lies the key to the delicate elegance and complexity. The herbs were first infused in a fruity Eau de Vie, distilled from our own grape skins. After a short steeping period, the herb infusion was blended with one of their reserve sparkling base wines and allowed to mature and integrate for a short period before bottling.
A delicate yellow colour, our dry vermouth is formed of 31 different herbs, spices and fruit. Intense rich warming nose reminiscent of cologne, bergamot, bitter orange rind and liquorice. Palate is dry, rich, masculine and robust with an underlying spicy bitterness.
Our delicate, dry vermouth is perfect for drinking chilled on its own, paired with a range of cheeses or in classic cocktails.
