Cotswold 1616 gin has been made from malt spirit rather than a grain based spirit. This technique derives from Holland where Genever (Dutch for Juniper) is made from malt spirit which is then redistilled with selected botanicals. Cotswold 1616 has been made using their Holstein pot still malt spirit which is then re-distilled with juniper, coriander, cassia, nutmeg, orange peel and afew other top secret botanicals. It is then aged in recharred wine barrels where it softens and develops wood and fruity notes. .
