Description
This wine is about pure fun and enjoyment. This is Knightor's standard offering, with vintage wines only being made in the best years and from the best parcels. It does not desire to look like Champagne or follow any other model apart from that it should be seen as 'English sparkling wine'. On the nose it is elegant, with light floral aromas, peach and apple like fruit, and subtle lees notes. Despite the dosage being at the Brut level, it also has plenty of fruit flavour which along with it's vibrant and fresh mousse makes for a fuller more jovial style. Their first sparkling wine.
Pale lemon green in colour with a lively mousse that quickly settles to a steady stream of fine bubbles. Aromas are wonderfully fresh, floral and fruity, dominated by elderflower, honeysuckle, pear and peach. On the palate, this wine shows great vivacity, with good acidity balanced by delicate fruit flavours and a fine mousse, leading to a clean and crisp finish. Serve at 8 degrees. An approachable yet elegant sparkling wine.
Grape variety: Reichensteiner, Huxelrebe, Kerner, Pinot Noir, Pinot Gris, Seyval Blanc. Vinification: Each varietal was whole bunch pressed and fermented separately at a cool temperature to preserve the aromas. The wine was blended in early May 2014, creating a fresh and aromatic wine. After just over 6 months ageing in tank, the tirage was added to the blend and it was bottled. To preserve the delicate fruity nature of this wine and maintain the typical Knightor Classic Cuvée style, ageing in bottle is from 12 to 24 months. After disgorging, dosage is added and the bottles are aged for a further six months to a year before release.
