The nose is very appealing with aromas of butter and toasted almonds. This is a wine with great balance there is an underlying acidity that ensures longevity and elegance whilst the intense, opulent flavours fill the mouth without being clumsy or heavy. They style is restrained and almost Burgundian despite the abundance of ripe southern fruit.
Sourced from Pyrenean foothills of the Pays Cathare that surrounds the towns of Carcassonne and Limoux, the beautiful rugged environment with its argilocalcaire sub strata is home to the AOP Languedoc and Limoux, but the vineyards do not stop with the AOP geographical limits and it is from these outskirts that we have sourced some exceptionally interesting wines.
Made from mostly hand-picked grapes, this wine has been vinified in large, old oak barrels which impart texture and intensity.
