As is the case as regards all of our cremes de cassis (blackcurrant liqueur), for this Dijon Creme de Cassis 15% they use the most prestigious blackcurrant variety: the Noir de Bourgogne variety. The berries the use are harvested exclusively in Burgundy in France.
They macerate the berries in a water and alcohol solution for about 10 weeks. Indeed, maceration is the best way to extract all flavours from these berries. Consequently, the alcohol-containing juice thus obtained is called infusion. After that, they add French white sugar to obtain this creme de cassis.
