The nose is fresh with some (red) fruits of the forest and sweet crushed cherries; liquorice, hints of tar and mixed spice. The palate has much more complexity than the average Beaujolais, with spice, black pepper and plum, as well as slight herbal or minty hints and lovely savoury grainy tannins.
In the vineyard
These grapes are taken from three precious hectares on the slopes of Mont Brouilly, where the vineyards are classified as "Cte de Bouilly" and whose hand-picked 50 year old vines yield perceptibly finer wines.
In the winery
Follows traditional carbonic maceration, before ageing in large oak foudre.
Plain grilled meats, good quality sausages. Charcuterie, local French cheeses, coq au vin, oriental pork or magret de canard.
