Grapes are hand-harvested and carefully sorted, with a small percentage undergoing whole-bunch fermentation and others left to dry naturally on the vine until November to concentrate flavours further. Fermentation takes place in temperature-controlled stainless steel tanks and traditional clay qvevri, followed by ageing in second and third-use American oak barrels and 5,000-litre wooden vats.
