Tarquin has used his ever popular base dry gin and added Tonka beans and clementine's to the mix. Tonka beans, otherwise very handily known as Tonquin or Tonkin beans, are harvested from massive Cumaru trees in South America. These dark, wrinkly seeds are soft when first harvested but are dried out over months of storage during which time they become firm and easy to grate. The main producers and exporters of the Tonka bean are Venezuela, Brazil and Colombia The Tonka bean has is very complex for such a small seed and contains flavours of vanilla, coconut, sour cherry, clove and liquorice. The bean has many uses and is often used as a vanilla substitute, in perfumes and to flavour tobacco products. It's used extensively in  French cuisine and the flavour of the bean can change depending on how it's served; this makes it especially useful when preparing pastry dishes and stews. So what's the gin actually like the? As expected it is very unusual; sour cherry, chocolate orange, vanilla and liquorice are all present in abundance and come from the clever addition of Tonka beans and clementine. Tarquin suggests serving this with a fresh clementine garnishing a long G&T.
