Sourced from our premium vineyards in the Limestone Coast ,renowned for producing distinctive varietal characters of ripe mulberries, plums and other savoury fruits. Harvested at optimal ripeness with the perfect sugar, acid and flavour balance; the fruit was crushed, cooled and given 48-hours of cold-soaking prior to warm fermentation, pressing and transferred to oak.
This rich and flavoursome wine was matured in both French and American barriques for 10-months to capture and enhance thecomplexity of this variety.
