Vinification Note
:Tufa soils, or limestone, are the key to the style of wines produced in this area. The soils stores heat and humidity during the day and releases it during the cool nights. Grapes are picked both manually and mechanically with severe sorting. Fermentation: pneumatic press with short skin contact - low temperature fermentation (14-15C). Beginning with the 1997 vintage, we also separately fermented and bottled a number of small batches from specific areas, called lieux-dits (named places) which have their own historical identity. After bottling, all our wines are left to mature for a few months or a few years in our underground cellars. Labelling and packaging are carried out with great care before shipment.
