Description

The Domaine Chofflet Valdenaire is located in the heart of the village of Russilly within a natural amphitheatre in the Givry appellation. The production focuses on both red and white wines with two premier crus.



Today the domaine is owned and managed by Denis and Edith Valdennaire. Denis a former downhill skier first became involved when he began to work along side his father-in-law in 1988. After training in Beaune he became more focused on the vineyards with a particular interest in soils. Today he is a member of the Groupement dEtudes et de Suivi des Terroirs (GEST) an association of vignerons who seek to improve vine nourishment and replace chemicals with natural alternatives according to the needs of individual parcels.



A BIT OF GEOGRAPHY Domaine Chofflet Valdenaire is located in the hamlet of Russilly, village of Givry. Real amphitheatre facing the sunrise, it is the balcony of Cote Chalonnaise from where you can see the Mont Blanc easily. Givry 1er Cru Clos de Chou is a small cirque of about 15 Hectares situated at the beginning of the small valley of Russilly facing south. The Clos de Chou is located on a particularly chalky local soil, rootstocks must therefore be very resistant to limestone. Maturity of the grapes is really exceptional on this slope protected from North and East Wind.



WINEMAKING TECHNICS: Grape harvested by hand. Grapes are destemmed and put in cement tanks. They are then cooled to favour a cold pre-maceration for a few days. Once the fermentation has begun, crushings are performed twice a day and pumping over once a day so as to favour a good aeration of the yeast. Fermenting lasts about 12 days, with temperatures control. The whole cuve Clos de Chou is grown in oak barrels during 9 to 14 months. Bottling takes place in the Springtime after a light filtration.



TASTING NOTES: Always of a nice ruby colour, it has a nose of fresh red fruits with cherry stone aromas, morello cherry or raspberry. In the mouth, it is fine, elegant and racy.



SERVING SUGGESTIONS: Matches well with white meat and marinade, fish served witsauce or matured cheese.

A very pleasant wine. Bright, clear red colour. Aromas are surprising in their intensity and fruit. On the palate, a tender, supple, graceful, round body. Very flavourful in the aftertaste, with a hint of blackberry jam. When the wine gets older, wild blackberry is the dominant aroma. After 3 or 5 years, the wine takes on a distinctive smell of truffle and undergrowth evolving towards notes of venison".
