Description
This Valmoissine has an intense colour and developed aromas of candied fruit. In the mouth the fruit is supple, and with a few more months of ageing the spicy tanins will be perfectly rounded. On the back palate a balanced structure is revealed for this Pinot Noir planted high up on the Verdon hillsides at an altitude of 500m giving the wine finesse and delicateness.
The Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine at 500 metres above sea-level which guarantees sunshine during the summer months whilst remaining cool and limits the possibility of spring frosts. The grapes are fermented in stainless steel open-vats for a short period of 4-5 days. Pigeage will take place 2-3 times a day to extract colour and tannins.
