Description
First created by Darren De Bortoli at the family winery in Bilbul in 1982, Noble One has gone on to be one of the most awarded wines in history, garnering more than 108 trophies and 358 Gold medals both nationally and internationally.
The 2007 vintaged marked the 25th vintage of Noble one Botrytis Semillon.

Palate
A richly opulent palate of dried stone fruits, citrus and honey complexed by oak. A luscious expression of concentrated fruit and oak with balanced acidity and textural length.
Vintage Conditions
A mild summer with no rain until late March which provided enough moisture to allow botrytis growth to begin. Further showers in late April together with early morning dews allowed the botrytis to spread. Harvest commenced mid-May and concluded in early June after good botrytis was achieved in all source vineyards. Baum levels ranged from 19 to 24 depending on the vineyard and amount of botrytis.
Winemaking
Fruit for Noble One over the past 25 vintages has been sourced from the same vineyards. Harvest time for each vineyard is determined by monitoring sugar levels and degree of botrytis to determine the optimum level of ripeness and botrytis flavours. Maturation occurred in 38% new, 42% one year old and 7% two year old French oak. The remaining portion of the blend was unoaked.

Sweet Full Bodied

Brilliant green-gold; has all the luscious intensity expected, ranging through citrus, cumquat and vanilla bean, yet is not over the top. Its best features are its balance, line and extreme length, similar to that of the '02.
