Caol Ila has remained almost a secret Islay malt. The Name is pronouced 'cull-eela', gaelic for 'sound of Islay'. The distillery is located in a cove near Port Askaig. This 1999 bottling from Gordon & Macphail has been matured in Sherry cask although it does not lend the typical mahogany colour to this malt. Sweet sherry notes with bacon and stewed pear aromas. On the palate it is smoky with sweet vanilla and a touch on banana.
